I am the queen of fun lunches. My middle school friends joked that I should win the superlative for “Most Creative Lunch” because I always brought gourmet leftovers that looked way better than their bologna sandwiches.
To this day I’m still pretty good at throwing together a good meal with random ingredients from the fridge and pantry (it helps if you keep the fridge and pantry well-stocked!). And that’s just what happened when I threw together a killer buffalo chicken pizza on naan bread last week.
We love keeping a pack of naan in the pantry for simple pizzas or even cheesy bread. It’s an Indian flat bread, very similar to a pita, but without a pocket. I grabbed these at Trader Joe’s in Tallahassee, but you can find at most any grocery store.
Another staple I always have on hand is canned chicken. Yep. Chicken in a can. It’s actually pretty darn good!
It’s great in quesadillas, casseroles, wraps, and more. Don’t knock it til you try it!
This pizza really couldn’t be simpler and you can totally customize to fit your tastes.
Buffalo Chicken Naan Pizza (for one!)
1 naan flat bread
1 tbsp. ranch dressing (I use Greek yogurt ranch)
buffalo sauce to taste
2-3 oz cooked chicken meat
1/3 cup shredded cheddar
1/4 cup sliced bell peppers
green onions for garnish
Preheat oven or toaster oven to 400 degrees.
In a small bowl, mix ranch with a few dashes of buffalo sauce. Spread ranch mixture over naan.
Sprinkle chicken, cheese and bell peppers over naan. You can add whatever ingredients you prefer, like sliced onions and blue cheese crumbles.
Bake in prepared oven for 8-10 minutes.
Garnish with sliced green onions. Drizzle with extra ranch dressing.
