Happy 2018, friends!!
As 2017 drew to a close, our family got a little too comfortable dining out. We typically eat one dinner and a lunch or two out per week, but we were really going crazy between Thanksgiving and the new year. We seemed to constantly be on the run and grabbing a quick bite was the easy thing to do.
In an effort to reign in our budgets and waistlines, I’ve declared January 2018 a month of eating ALL meals at home!
This will be a tough challenge for me. I love dining out and usually take the kids to Local Market, Burrito del Sol, or good ole Chick-fil-a at least once, if not twice a week. My credit card is begging for a break!
Coincidentally (or not?), I’m also resolving to cook one new recipe per week this year. Seems easy enough, right? Well I tried this a couple years ago, but failed. I’m really going to give it a go this year since I always seem to cook the same meatloaf, tacos, burrito bowls, stir fry, etc and I’m ready for something new.
Here are some of the recipes I’ve pinned that I think my family will enjoy:
Ina Garten’s Lemon Chicken (made this January 2nd and it was AMAZING!)
Chicken Cordon Bleu Casserole
Bacon Ranch Chicken Foil Packets
Beef and Broccoli Stir Fry
Salisbury Steak Meatballs
Baked Pesto Chicken
Easy Lo Mein
SWEETS + SNACKS
Bisquick Chocolate Chip Cookies (wonder how they stack up to my famous recipe?)
Homemade Take 5 Candy Bars
Skinny Frozen Peanut Butter Whips
Baked Parmesan Crisps (these would be perfect on a Caesar salad)
Buffalo Ranch Crackers
White Pizza Dip
And now I’m starving.
And it’s only January 3rd but already rocking this whole resolution thing. We haven’t eaten out AND I made a new recipe last night!
Please share any recipes you’ve been loving. I need all the inspiration I can get! And maybe I’ll be super organized and keep a file of the recipes I make and share 52 new recipes at the end of the year (fingers crossed).
Happy New Year, friends!
